Savory Cornmeal Bread (Mısır Ekmeği)











Savory corn meal or corn flour bread was something my mom used to bake for breakfast on cozy/lazy weekends. And hers is a special one because corn bread is usually quite plain. However, to make it into a wholesome breakfast mom added white cheese, olives, parsley, etc. It was always a special treat not only because it was delicious but also because my aunt would bring the corn flour from my dad's hometown, a small town in the Black Sea Region. 
No worries, though, the recipe is so delicious that it works with any corn flour or meal. 
Corn flour can easily get bitter. Store 'it in the fridge or freezer, in an airtight container, or better, buy fresh in small quantities.   
2 cups of corn meal
1 cup flour
3 eggs
1 cup yogurt
3/4 cup oil (corn, sun flower, or light olive oil-if you use olive oil it might make the cake bitter)
2 1/2 tsp baking powder
1 tsp salt (depending on your feta cheese)
1 cup of feta cheese, crumbled
1/2 cup black olives, pitted and sliced (you can use canned olives but the flavor will not be the same)
1 tsp pepper flakes
1/2 bunch parsley or dill, chopped finely (if you don't have parsley or dill, you can use thyme)










-Beat eggs in a bowl and add all the ingredients. Mix well.
-If the dough seems too dense, lighten it up by adding one table spoon of milk or yogurt at a time until you have soft dough. This shouldn't be a dense cake.
-Grease the owen dish (I used a 2 inch deep 8.5 x 11.5 inch one)
-Put the dough in the owen dish. Sprinkle black seeds on it if you wish.
-Bake approximately for an hour in a preheated owen at 375ºF. After 45 minutes, start checking with a knife every 10 minutes. When the knife comes out clean, the cake is baked.

Collard Greens Soup (Karalahana Çorbası)




























The apartment that I lived in Ankara was on the first floor of one of those old 4 story buildings with just two apartments on each floor and a back yard that the residents didn't care about. A month after the move I remembered there was a back yard and looked over to check it out. Among the things that you can find in the back yards of apartment buildings in Turkey are gazebos, junk, flower beds, people playing "okey," a tile-based game similar to Rumikub, or people drinking tea and eating sunflower seeds. Therefore, I was quite surprised when I saw collard greens in my building's back yard. And I am not talking about two or three plants here; I am talking about endless rows and rows of collard greens. Collard greens is an indispensable component of the Black Sea cuisine in Turkey, and it is difficult to find them outside that province. So I immediately knew there was a homesick Karadenizli (a person from Black Sea) in the building who apparently had a big craving for collard greens. I was right; our concierge Pakize was from Trabzon and capable of consuming a back yard worth of collard greens with her husband in 2-3 months.

The discovery of garden of collard greens intrigued me to cook with them. The next winter I borrowed a bunch of collard greens time to time from Pakize and made collard greens soup based on her instructions. Later, I had this soup a couple of times at different seafood restaurants, but they were not even close to Pakize's recipe. This soup, a specialty of Black Sea, is just perfect for cold winter nights. It has greens, beans, and corn in it; what else can you ask for?        


1 large bunch collard greens
1/2 cup dry white beans (cannellini or northern beans)
1/2 cup cracked corn (you can find cracked corn at Middle Eastern or organic food stores or feeder stores) OR 1/2 cup coarse grits if you cannot find cracked corn
1/4 cup corn flour
7-9 cups of water
3-4 tbsp butter
1 tsp paprika
1 tsp red hot pepper flakes (in traditional recipes you cannot find spice for this soup, but I think hot peppers, hot pepper flakes, or sauces makes this soup even better)

-A night before, put beans in a pot with 3 cups of water. First bring to a boil, then turn it off. Cover and soak overnight.
-The next day cook the beans until soft. (Or use 1 can of beans)
-Wash collard greens well, discard bad leaves and leaf tops. Chop the stems finely. Cut the leaves first into stripes, then into edible-size squarish pieces.
-Boil 7-8 cups of water in a big pot.
-Add collard greens and cracked corn into the boiling water. Cook until soft: ~20-25 minutes.
-Add beans.
-Add corn flour and keep stirring constantly while adding it to prevent lumping.
-Turn the heat to low-medium and cook for almost half an hour to let the soup thicken stirring every 3-45 minutes.
-Heat butter in a small pan. When it's hot but nit burning, add paprika. Let sizzle for a couple of seconds.
-Serve the soup with a spoon or two of butter and paprika on top.

Corn and Bean Soup (Pakla Çorbası)



This Black Sea Region recipe is a recipe from my dad's side of the family. My aunt invites the rest of the family over dinner (in addition to all the special occasions) when she cooks three special dishes. Number one is mantı, number two is dolma, and number three is pakla soup, which by the way draws more attendees than dolmas. This simple soup is so popular among the family members that there had been times when we fought over the second serving. The popularity derives from the limited number of times we get to have this soup in a year, and this scarcity is a direct result of a-hard-to-find ingredient: corn bulgur.


Corn bulgur although widely used especially in the Black Sea Region is rarely found elsewhere in Turkey or here in the States. Corn bulgur is parboiled crushed kernel corn made by a similar process that is used for common wheat bulgur.

When I got the recipe from my aunt years ago I asked her what to do if I cannot find corn bulgur here in the States, she suggested fresh corn kernels--it turned out fıne, but wasn't the same soup. However, back then I didn't know about grits. After moving to South, I was introduced to grits, cheesy grits in particular--I absolutely love it. Through explorations I came across coarse grits, which creates a very similar taste to that of corn bulgur in pakla soup, which literally means bean soup.


1 cup uncooked coarse grits (1/3 or 1/4 of a kernel coarse)
~ 1 cup dry cannellini beans or ~2 cups cooked cannellini beans or 1 can of cannellini beans
1 small onion, grated
2 tbsp tomato paste
3-4 tbsp butter
salt
1 small piece of bone-in lamb shoulder*

-Put  grits and beans if you're not using can beans in a pot filled with water. Bring to a boil, turn it off, cover and soak overnight.
-Next day put grits and beans in a pot with lots of water (~10-12 cups) with bone-in lamb shoulder and salt. Cook on medium for an hour or until both beans and grits are soft.
-In a frying pan, heat butter and saute grated onion until soft.
-Add tomato paste cook for another minute or two.
-Add onions to the soup and cook for another 5 minutes.

*You can skip the bone-in lamb or beef; this soup is also very good without addition of meat.

Red Lentil Kofte / Mercimek Köftesi




























This vegetarian kofte is one of the most popular appetizers of Turkish cuisine.




























1 cup red lentil
1/2 cup fine bulgur
1/2 cup olive oil
2 cups of water
1 medium onion, very finely chopped
1 tsp cumin
1 tbsp tomato paste + 1 tbsp red pepper paste (if you cannot find red pepper paste you can use 2 tbsp tomato paste)
~1 tsp salt
juice of half or 1 lemon (depends on how you like it: sour or not so sour)
1/3 bunch parsley, finely chopped
1/2 bunch green onion, finely chopped
curly leaf lettuce



























-Wash lentils and boil them in 2 cups of water until it almost soaks the water.
-Once you turn it off, add bulgur and salt. Mix once and cover to let the bulgur expand. Let it cool off.
-Heat oil in a pan and add the onion (not the green one!) and cook until soft.
-Add tomato paste and cook for another 1-2 minutes.
-Add cumin and stir once you turn it off.
-Add this to the lentils which should be cool by now.
-Add half of finely chopped parsley, green onion, and lemon juice to the lentils. Mix all well.
-Take walnut size pieces and give them kofte shape in your hands.
-You can either place lettuce leaves on a serving plate and put koftes on top as in the picture, or serve koftes and lettuce leaves separately. However, when you eat them you should wrap each kofte in a lettuce leaf.

Garbanzo Bean Pilaf (Nohutlu Pilav)



























Now a highly common and popular street food, garbanzo bean pilaf (nohutlu pilav), was a special dish served during the reign of Mehmet the Conqueror by Grand Vizier Mahmut Paşa to his guests. Mahmut Paşa's pilaf had both real, edible garbanzo beans and garbanzo beans made out of gold! Mahmut Paşa called the golden ones his "diş kirası," which literary translates as "tooth money." But don't think it was a compensation for broken teeth! In the past it was a tradition of wealthy families to give a feast for the poor and the wealthy alike during the month of Ramadan. The family would give a small gift to everyone who attended the fast breaking dinner (iftar) for kind-of renting their teeth to their hosts for the night. Apparently Mahmut Paşa offered the gift in the food in stead of handing it out.

Nowadays in Turkey you can eat this rich and tasty pilaf, usually along with pieces of chicken, at small sloppy restaurants during the day and on the street late at night, post-bar hours, and with no "tooth money."

























1 cups rice
1/2 cup garbanzo beans (soaked over night and boiled the next day until cooked or use can garbanzo beans)
1 medium onion, finely chopped
2-3 tbsp butter (traditionally sheep's tail fat is used for this recipe, but we settle down for butter now)
2 cups of water
salt and pepper


























-Heat butter in a non-stick pot.
-Add onion and stir until soft.
-Add rice and garbanzo beans. Stir for a couple of minutes.
-Add water, salt, and pepper.
-Let it boil first and then turn it to low heat. Cover and cook until the water is absorbed. Do not stir the rice while cooking.
-Turn it off and cover the top of the pot with a clean kitchen towel or paper towel. Place lid on tightly. Let sit for ~10 minutes.
-Fluff and serve it as a main dish or as a side with meat.

Bulgur with Green Lentils and Walnuts (Cevizli Bat)



























Bulgur with Green Lentils and Walnuts is a traditional recipe from a Central Anatolian city, Tokat. In Tokat's local cusine dishes with grape leaves have an important role, and this recipe is a good example. Bulgur with Green Lentils and Walnuts is a bit like kisir, but has a nuttier taste with walnuts and lentils.



























1 cup fine bulgur
1 cup hot water
1 cup cooked green lentils (~1/2 cup dry green lentils would make 1 cup cooked lentils)
1/2 cup chopped walnuts
2-3 green onions, finely chopped
1/3 cup chopped parsley
1/4 cup chopped fresh dill
1 green pepper or 1/2 green bell pepper, finely chopped
2 tbsp tomato paste
1 tsp or less red pepper flakes
1 tbsp finely chopped fresh basil or 1 tsp dried basil flakes
1 tsp dry mint flakes
1 tsp or less black pepper
salt
optional a couple of cherry tomatoes

grape leaves (if unavailable, lettuce would do)

-Put bulgur in a bowl and add hot water. Stir once, cover with a thick towel and wait until bulgur soaks all the water.
-If you have fresh grape leaves, boil some water and cook grape leaves for 2-3 minutes. Set aside and let cool.
-Add tomato paste to bulgur and mix it well with the back of a spoon or your hands until paste is homogeneously distributed.
-Add lentils.
-Add green onion, parsley, dill, tomatoes, green pepper, basil, mint, red pepper flakes, black pepper, walnut, and salt.
-Serve bulgur with lentils with grape leaves or lettuce. Put some in the middle of a leave, make a roll or a bundle and enjoy.

note: Although the traditional recipe doesn't ask for it, I love adding lemon to bulgur and lentils.

Bulgur Kofte (Çılbak Köftesi)



























Bulgur Kofte is a different version of another traditionally Turkish recipe, garlicy bulgur buttons, from southeastern Turkey. Koftes are usually made with ground meat but this one requires only bulgur, which explains the name: Çılbak Köfte. "Çılbak" means "naked" and "poor," so we can translate the name for this dish as "The Poor Man's Kofte."

These koftes are easy to make and delicious. You can have them with the garlicy yogurt, as well as with different sauces from the garlicy bulgur buttons recipe.




































for 4 people
makes approximately 45 koftes

for koftes
1 cup fine bulgur
1 cup hot water
1 cup white flour
1 egg
3 tbsp tomato paste
1 tbsp red pepper paste
1 tsp salt

for the sauce
2 cups yogurt
2 cloves of garlic, minced
2-3 tbsp butter or olive oil
1 tsp paprika




























-Put bulgur in a big bowl. Add hot water, cover and let it soak for 10 minutes.
-Wet your hands with cold water and knead bulgur for 5 minutes.
-Add egg, salt, tomato and pepper red paste, and mix well with your hands.
-Start adding flour slowly and knead the bulgur dough for 10-15 minutes, until everything is well mixed.
-Take one generous table spoon of the mix and roll between your palms to form a ball, wetting your hands with cold water now and then. Then, squeeze it in one hand to form the fingerprints on an almost oval shape.
-Fill a big pot with water half way through and bring to a boil. Add bulgur koftes, let it boil again, and cook for 15 minutes. Remove koftes with a slotted spoon.
-Beat yogurt with minced garlic with a fork until smooth in a bowl.
-In a small saucepan melt heat butter or olive oil. When it is hot, add paprika and let sizzle for 10-15 seconds. paprika easily burns, so watch out.
-Serve koftes in a deep plate. First pour garlicy yogurt and then sizzling paprika on top.
Simply delicious!

Milky Semolina Dessert with Cocoa Powder (Sütlü Kakaolu İrmik Tatlısı)


























Although the traditional milky semolina dessert is on the heavy side with butter and eggs, the contemporary take on the traditional recipe is much lighter, excluding both butter and eggs. The recipe for the milky semolina dessert remains almost the same, yet the dessert is served in different ways (in casserole dishes, bowls, or glasses), with various sauces (chocolate, raspberry, strawberry, caramel, etc.).


























8 small wine glasses
5 cups of milk (whole, 2%, or fat free)
1 cup semolina
1 cup sugar
1/2 tsp vanilla extract
3 tbsp unsweetened cocoa powder
shredded coconut, ground or crushed walnuts, pistachios, orhazelnuts

-Put milk, semolina, sugar, and vanilla extract in a pot and start cooking on medium until it thickens. Taste it at this point, and if it is not sweet enough for you add more sugar and mix well.
-Pour half of it into glasses or bowls half way through.
-Add cocoa powder to the remaining mix in the pot and stir well.
-Add the cocoa semolina on top of glasses and bowls.
-Sprinkle coconut, walnut, pistachio, or hazelnut on top.
-Let them cool down at room temperature and then refrigerate.
-Serve them cold, with a scoop of ice cream on top if you wish.

Tomato Pilaf (Domatesli Pilav)

























One of the indispensable dishes of summer time dinner tables. It goes well with any kind of grilled meat and olive oil dishes.

serves 6

2 cups of rice
1 small onion, finely chopped
3 tbsp olive oil or butter
3-4 juicy tomatoes, diced and preferably skinned or 1 can of petite diced tomato
1 tsp salt
a pinch of sugar (1/4 tsp or a little more)
1 tsp black pepper (optional)
4 cups of water or stock (vegetable, chicken or beef)
finely chopped parsley to garnish
























-According to the traditional Turkish style of making rice pilaf, rice is soaked in warm water for at least 20 minutes and then rinsed well to wash off the starchiness. Although I have been scolded by mom and aunts over this issue, I do not soak or wash rice for no good reason other than laziness.
-Saute onion in a pot, preferably a non-sticky one, with olive oil or butter until soft.
-Add the tomatoes and cook for 4-5 minutes until they acquire that cooked-tomato color.
-Add rice and stir for a couple of minutes.
-Add water or stock, salt, pepper, and sugar. Stir once. Turn the heat down to low once it starts boiling.
-Cover and simmer on low heat for 15-20 minutes, until it absorbs the water or stock. Do not stir it!
-Once it's cooked. Take the pot off the stove and cover the top with a paper towel or a clean kitchen cloth. Still, do not stir it. Replace the lid. Let sit covered for at least 10 minutes.
-Now you can stir or fluff it up to distribute the oil evenly that sat on the bottom. Sprinkle chopped parsley and serve hot.

Bulgur Pilaf with Spinach and Fried Onions (Ispanaklı ve Kızarmış Soğanlı Bulgur Pilavı)



























I like bulgur pilafs as light summer lunches , because they are easy and quick to make, and if cooked with olive oil, can be eaten cold or warm. Bulgur Pilaf with Spinach and Fried Onions recipe is introduced as a rural Arab recipe by Paula Wolfert in The Cooking of the Eastern Mediterranean. I decided to try it, because it reminded me of a Turkish pilaf recipe with white rice and spinach. It is a really tasty, refreshing recipe with a nice twist of fried onions. It goes well with red meat and/or yogurt.



























2-3 medium onion, halved and cut in thin half rounds
3 tbsp olive oil
1 pound fresh spinach, stemmed coarsely chopped (frozen spinach would be fine, too)
1 1/2 cup coarse bulgur
2 cups of stock (chicken, beef, or vegetable)
1 tsp salt
1 tsp black pepper
1 tsp allspice (I skipped this one)
1-2 tsp spicy crushed red pepper flakes (this was my addition)

-Heat 2 tbsp of olive oil in a skillet and cook the onions on high-medium covered, stirring frequently, until they are golden brown.
-While onions are cooking, heat 1 tbsp olive oil in a pot and add spinach to wilt approximately 5-7 minutes depending whether it's fresh or frozen.
-Once spinach is wilted, stir in bulgur, stock, salt, and spices. Cover and cook over low until it soaks all the stock or bulgur is tender.
-Remove bulgur from heat and let stand, covered, for 5 minutes.
-Stir in the fried onions.

Garlicy Bulgur Buttons (Sarımsaklı Köfte)














These little delicious buttons are known by a variety of names in different regions of Turkey such as sarımsaklı köfte or fellah köftesi, etc. Along with the name change come a variety of sauces. I am posting the recipe with three different sauces. Whichever sauce you pick, there are must do's when following the recipe: buttons should be small, you really need to press you finger on each one (it holds the sauce), and do not go light on garlic.






for buttons
2 cups of fine bulgur
1/4 cup semolina
1/4 cup white flour
1 tsp cumin
1 tbsp tomato paste
1 tsp pepper paste (if you can find)
1 tsp salt
1 tsp ground black pepper
2 cups of water

for the tomato sauce1/4 cup olive oil
4-5 medium tomatoes, petite diced (or 2 cans of organic diced tomato)
1/2 bunch parsley, finely chopped
5-6 cloves of garlic, minced
1 tbsp dried mint flakes
for the yogurt sauce
2 cups of yogurt
2 cloves of garlic, minced
for the sour sauce
1/4 cup olive oil
1 tbsp tomato paste
1 tbsp pepper paste
5-6 cloves of garlic
juice of 1 lemon
mint flakes
chopped parsley

black pepper


-In a bowl wet bulgur with 1 cup of warm water. Cover with a clean kitchen towel or a lid and let soak for 10 minutes.
-Add semolina, salt, cumin, black pepper, tomato and pepper paste. Start kneading until semolina and bulgur stick to each other.
-Add flour and keep kneading. Add 1 cup of water in small amounts and knead until the mixture can hold together.
-Take dime size pieces from the mix and roll it in between your palms. Press on top with your index finger. (If it cracks on the sides when you press with your finger, it means you need to knead more) Place buttons on a tray.
-In a big pot, boil approximately 2 liters of water with salt.
-Throw buttons in boiling water. Take them out with a slotted spoon when they come up to surface.

Start preparing for the sauce while cooking buttons.
-For the tomato sauce heat olive oil in a pot.
-Add garlic and mint flakes and stir until fragrant.
-Add diced tomato. Simmer on low until cooked.
-Add chopped parsley after you turn it off.
-If you like sour sauce, heat olive oil in a pan. Stir in garlic and tomato paste (and pepper paste) until cooked. Add mint flakes, black pepper, and lemon juice. Cook for another minute and it's done.
-If you prefer a yogurt sauce, mix well 2 cups of yogurt with minced garlic.
-Serve buttons with the tomato, sour, or yogurt sauce on top, or with both.

Garbanzo Beans and Soft Wheat Berries Soup (Nohut ve Buğdaylı Çorba)



























A hearty delicious soup for the last cold days of winter from Lezzet's February 2007 issue.

1 cup dry garbanzo beans
1/2 cup soft wheat berries
1/2 cup red lentils
1 small celery root/celeria, grated
1 carrot, petite diced
5-6 parsley stems, chopped
2-3 celery root stems, chopped
2 tbsp butter
2 small onions, finely chopped
2 tbsp tomato paste
6 cups vegetable or beef stock
2 tsp oregano leaves
1 cup plain yogurt (non-fat, 1%, 2%, or whole milk)
1 tbsp olive oil
salt
pepper


























-Put garbanzo beans and soft wheat berries in a pot. Cover with water ~3 inches above garbanzo and soft wheat berries. Bring to a boil. Then turn it off, cover and soak overnight. Wash and rinse them well the next day.
-Heat butter in a big pot. Add onions and cook until soft.
-Add in red lentils and tomato paste. Stir for 2-3 minutes. Then, add soaked garbanzo beans and soft wheat berries. Stir for another 2-3 minutes.
-Add grated celery root, diced carrot, chopped parsley and celery root stems, oregano leaves, black pepper, salt, and stock (vegetable or beef).
-Let it boil on medium heat for approximately an hour.
-In a small bowl, mix yogurt and olive oil.
-Slowly stir yogurt into the soup. Mix once and let it boil for a couple of minutes. Then turn it off. The soup is ready.

Lentil Soup with Bulgur (Bulgurlu Mercimek Çorbası)


























Lentil soups are very common in Turkey. This one is traditionally made with red lentils. However, I like the taste of bulgur more with brown or green lentils. For this one I used French lentils. The peppery taste of French lentils along with dried mint was simply perfect for this winter soup. To try the traditional Turkish recipe, just replace French lentils with red lentils.

3 tbsp butter
1 medium onion, finely chopped
1/2 cup French lentils
1/2 cup bulgur (I used fine bulgur, but coarse is fine, too)
2 tbsp tomato paste
2 tbsp flour (I used whole wheat)
6-7 cups of stock
2-3 tbsp dried mint flakes
2 tsp thyme
2 tsp red pepper flakes
salt


























-Saute onion with butter until soft.
-Add flour stir constantly for 1-2 minutes. Add tomato paste, stir another 1-2 minutes.
-Add lentils, bulgur, stock, and salt.
-Cover and simmer until lentils are cooked for approximately 30 minutes.
-At this point, if you want a smooth soup use a blender.
-Add mint, thyme, and pepper flakes.

Bulgur Risotto with Beet and Beer (Bira ve Pancarla Bulgurlu Risotto)




























We've been obsessed with risotto lately. Once I got familiar with the ins and outs of making risotto, I felt like I gained the authority to explore with the "genre." I wanted to make an almost Turkish fall risotto. The recipe gets its Turkishness from bulgur, and its fallness from beet, beer, and walnuts.

I used Negra Modelo, a non-hoppy dark lager. I didn't want to bitter up the risotto with hops. Beets have somewhat sweet flavor that goes perfect with tarragon. This was one of the best risottos I've ever had and I'm not saying this because I made up this recipe.




























1 1/2 cups coarse bulgur
1 cup Negro Modelo
4 cups of stock (I used vegetarian stock)
1 onion, finely chopped
2 cloves of garlic, minced
3 spring onions, chopped
1 cup of grated beet root
2 tbsp olive oil or butter
1 tbsp butter
1/2 cup Romano or Parmesan
1/4 cup feta cheese
1/4 cup finely chopped walnuts
2 tbsp tarragon
salt
black pepper


-Bring the stock to a boil and then turn it down.
-Heat the olive oil in a pot and stir in onion, garlic, and green onions. Cook until onions are soft.
-Add bulgur. Stir for a minute or so until bulgur is coated with oil and vegetables.
-Slowly add beer and and wait until it totally evaporates.
-Add in grated beet, tarragon, black pepper, and salt--be careful with salt if you're using already salty kinds of cheese. Stir for a minute or two.
-Start adding the hot stock into the pot 1/2 cup at a time. Simmer each 1/2 cup stock until absorbed, stirring frequently.
-Add cheese, walnuts, and 1 tbsp butter. Mix well. Wait for 5 minutes and serve.

Red Lentil and Wheat Berry Soup (Kırmızı Mercimekli ve Buğdaylı Çorba)



























1/2 cup wheat berries
1 cup red lentils
6 cups of beef or vegetable stock/broth
a pinch of saffron
2 tbsp olive oil
1 tsp dried mint flakes
1 tsp red pepper flakes
salt

-Boil wheat berries with 4 cups of water until soft. Rinse excessive water.
-In a pot boil 6 cups of beef or vegetable stock. Add first saffron threads, boil for a minute and then add wheat berries and red lentils. Cook for 20-25 minutes until lentils are cooked.
-Heat oil in a pan. Add mint and pepper flakes. Let it sizzle for a bit.
-Pour oil mix either into the pot or into every soup bowl on top of soup.

Bulgur Pilaf with Green Lentils (Mercimekli Bulgur Pilavi)



























A perfect bulgur pilaf recipe!

1/2 cup green lentils
1 cup coarse bulgur
5-6 sun dried tomatoes, finely chopped
2-3 dried hot chilies, chopped
2 red or green chilies, chopped
2 medium onions, finely chopped
3 tbsp tomato paste
4 tbsp olive oil



























-Boil 1/2 cup green lentils with 3-4 cups of water until soft, approximately 15-20 minutes, and drain. (!/2 cup lentils will make 1 cup after boiled)
-Heat olive oil in a pot. Add onion. Stir for 5 minutes.
-Add sun dried tomatoes, hot chilies, and green peppers. Stir for 3-4 minutes and then add tomato paste. Stir for another 3 minutes.
-Add bulgur, lentils, 2 cups of hot water, and salt.
-Once it starts boiling, turn it all the way to low. Cover and cook until there's no more water left.
-Cover the top of the pot with paper towel or a clean kitchen towel. Seal with the lid and let sit at least for 10 minutes before you serve.

Stuffed Zucchini with Bulgur (Bulgurlu Kabak Dolması)


























I made pepper dolmas with bulgur two weeks ago and we loved it. So, I decided to try the recipe again, this time with zucchini. I picked big zucchinis, carvable in my standards. I cut each zucchini into 3 equal parts and carved carefully so that each one had a thin bottom to hold stuffing. If you work with smaller zucchinis, just cut them into two. With zucchinis I used fresh dill and mint, and also added garlic. And in the end, stuffed zucchinis was as delicious as stuffed peppers with bulgur. Yet again if you don't like bulgur much, try stuffing zucchini with stuffing in this recipe.

3 big zucchinis
1/2 cup coarse bulgur
1 big onion, chopped
2 cloves of garlic, minced
1/2 bunch green onions, chopped
1/2 bunch dill chopped
2 tbsp chopped fresh mint or 2 tsp mint flakes
2 long green chilies like anaheims, chopped
4 medium tomatoes, petite diced
approximately 1 tsp lemon zest
1/3 cup olive oil
1 tsp crushed peppers
salt
water


























-Saute onion, garlic, green onion, and chilies with 1/4 olive oil for 5-6 minutes.
-Add bulgur, tomato, dill, fresh mint, lemon zest, salt, and crushed peppers. Stir for a minutes. Add 1/3 cup hot water. Cover and cook until bulgur soaks all the water.
-Stuff zucchinis with bulgur mix. Place in a pot facing up.
-Pour hot water half way through zucchinis. Scatter rest of the olive oil. First bring to a boil and then cover and simmer on low for 40-50 minutes or until zucchini is cooked.

Stuffed Peppers with Bulgur (Bulgurlu Biber Dolması)


























This dolma recipe is definitely for those who love bulgur. If you don't like bulgur, then your recipe for stuffed peppers is this one. On the other hand, if you like bulgur, this is a great recipe with fresh herbs and refreshing lemon zest.


























5-6 small bell peppers (do not use those huge American bell peppers; they have really thick skin, are too big for stuffing, and most important of all are not flavorsome)
1/2 cup coarse bulgur
1 big onion, finely chopped
1/2 bunch green onions, chopped
1/2 bunch dill chopped
1-2 tsp mint flakes
2 long green chilies like anaheims, chopped
4 medium tomatoes, petite diced
approximately 1 tsp lemon zest
1/3 cup olive oil
1 tsp crushed peppers
salt
water

























-Take the tops of bell peppers. Take the seeds out, wash and rinse.
-Saute onion, green onion, and chilies with 1/4 olive oil for 5-6 minutes.
-Add bulgur, tomato, dill, lemon zest, salt, and crushed peppers. Stir for a minutes. Add 1/3 cup hot water. Cover and cook until bulgur soaks all the water.
-Stuff bell peppers with bulgur mix. Place in a pot facing up.
-Pour hot water half way through peppers. Scatter rest of the olive oil. First bring to a boil and then cover and simmer on low for half an hour.
-Serve warm with yogurt.

Spinach with Soft Wheat Berries (Buğdaylı Ispanak)

























I usually cook spinach with white rice. I had bought a big bag of soft wheat berries for another recipe. They are tastier than bulgur, and softer and easier to chew than brown rice. I decided to use them with spinach for a great summer recipe.

























1 full cup of pearl onions, or 1 big onion, chopped
2 cloves of garlic, sliced
3 tomatoes, grated or 1 can diced tomato
1 cup cooked soft wheat berries
1 lb / almost 1/2 kilo spinach, chopped
3 tbsp olive oil
1 cup vegetable stock or water (hot)
1/2 tsp lemon juice
1 tsp sugar
salt
black pepper (optional)
red pepper flakes (optional)

























-1/3 cup of soft wheat berries will make approximately 1 cup when they're cooked. Boil 1/3 cup soft wheat berries in 3-4 cups of water until berries are soft.
-Heat the oil in a broad pot. Stir onion and garlic until slightly brown.
-Pour in tomatoes and cook for 5-8 minutes.
-Stir in spinach, lemon juice, sugar, salt, pepper(s), and berries.
-Pour vegetable stock.
-Cover and cook on medium for 30-35 minutes.
-You serve it cold or hot. It goes well with fresh bread and yogurt.

Cold Soft Wheat Berry Soup (Soğuk Buğday Çorbası)






















I'm back from Turkey with great memories and recipes. The first recipe is "cold soft wheat berry soup." Although this dish is called soup, it might be served as an appetizer or a side dish. However it's served, it's a great refreshing and healthy dish for hot and humid summer days. During most summer days, my mom keeps cooked soft wheat berries ready in the refrigerator (they are usually good for at least a week). The last week of July was unbearably humid generally in Turkey and especially in my hometown; so hot and humid that our favorite pass time activity was to sit motionless in front air conditioners. During those painful days, cold soft wheat berry soup and ice cold watermelons were the only two things we could have for lunch and both felt sooo good.






















soft wheat berries
yogurt
water
dried-mint flakes or finely chopped fresh mint
oregano leaves
red pepper flakes
olive oil
salt

-Boil wheat berries with a good amount of water until cooked. (You can cook more than you need for the day and keep the rest in the refrigerator for at least a week)
-Take as much as you need in a big bowl and add yogurt on top enough to cover the berries when mixed. (We always add a little more than necessary to cover berries)
-If you like a thick bowl of soup, do not add water, but if you like it thinner add some water. With this soup, everything is up to you; you can add more or less of everything.
-Sprinkle mint, oregano, pepper flakes, and salt on top.
-Add 1 or 2 tbsp of olive oil.
-Mix and serve cold.
